Carol O'Neal Kicinski of Dunedin, Florida built a national name from her own kitchen — a television chef, cookbook author, and the founder of Simply Gluten Free magazine. FACT: After a gluten-sensitivity diagnosis more than two decades ago, Carol Kicinski turned a personal health challenge into a career: monthly cooking segments on the nationally syndicated Daytime program out of an NBC affiliate, multiple cookbooks, a magazine, and a long-running recipe blog that reached the celiac and gluten-free community nationwide. FACT: Her January 6 case was resolved with misdemeanors. She pleaded guilty on November 8, 2022, and on June 27, 2023 was sentenced to 20 days of incarceration, one year of probation, and a $525 fine. FACT: On January 20, 2025, President Trump issued clemency covering January 6 cases, including Carol Kicinski's. Before that day and after it, the Dunedin, Florida chef's life work has been the same thing: feeding people who thought they could never eat well again.
